Zucchini is easy to digest and have a very low carbohydrate content. Therefore, the vegetables in the low carb diet is an indispensable food, because it can also conjure up alternative spaghetti. Served together with a fine sauce, they simply taste delicious. But even as a simple salad variant, the zucchini convinces.
Ingredients For The Salad (2 Persons)
750 g zucchini
Wash thoroughly, remove the end pieces and cut into very thin slices
A bunch of coriander
Wash, dry and finely chop
1 squeezed garlic clove
5 tablespoons olive oil
1 tablespoon thyme
1/2 teaspoon oregano
Mix all ingredients for the dressing vigorously. Put the zucchini in a salad bowl, pour over the dressing and mix well. Let it simmer for 30 minutes, season again and sprinkle with coriander.
With The Tomato Variation
Soak dried tomatoes in hot water and then cut into thin strips. Chop walnuts (or other nuts) into rough pieces. Mix the zucchini sticks in a large bowl with dried tomatoes, olives and walnuts. Add olive oil, balsamic vinegar, salt and pepper and season to taste. The zucchini salad can be eaten immediately. If it can rest for a few hours, the zucchini sticks absorb the marinade better and thus become softer.
