The rocket salad has very tasty recipes. This salad goes usually well with grilled meat or as a small snack with a baguette.
Ingredients For The Salad
100 g of rocket
A little bit olive oil( 3 tablespoons)
1 tbsp. Balsamic vinegar
A bit mustard
1 pinch of salt
1 pinch of pepper
Steps To Prepare A Good Rocket Salad
For the rocket salad, first, salt the aubergine slices from both sides and after about 15 minutes dab off the liquid removed from the surface with kitchen paper. As a result, the aubergine slices get a more intense toasted roast.
Wash the rocket and pat dry. Mix a dressing of balsamic vinegar, olive oil and mustard and season to taste with freshly ground salt and pepper. Halve the dates tomatoes and add to the salad marinade.
Brown aubergines in hot olive oil on both sides, lightly pepper, let them cool and roll them a little. Mix rocket and halved tomatoes with the dressing in a bowl. The portion on small salad plates put the aubergine slice on top and decorate with the halved tomatoes.
Tips For The Rocket Salad
The more oil you use to fry the aubergines, the better you can shape them. If you like the arugula salad a bit “fruity”, add a teaspoon of lemon juice to the salad dressing.
