Refined Watermelon Salad

This fruity watermelon salad tastes as a side dish to grilled ones, but can also be enjoyed as a main course. Watermelon consists of 95% water and is therefore very low in calories.

Watermelon tastes wonderful even in salty dishes, especially for salad, it is perfect. We have chosen a combination with chickpeas, cucumber and many herbs, the dressing consists of balsamic and the nutty avocado oil and roasted almonds, simply heavenly.

Watermelon Salad

Ingredients For 5 Persons

1500 g watermelon

300 g of feta cheese

35 g pine nuts

1 lemon

2 teaspoons of garden vegetables bouillon (in the glass)

2 tablespoons boiling water

1 tablespoon honey, liquid

5 stems of mint

Salt and pepper

Steps To Prepare The Watermelon Salad

Cut the watermelon and feta cheese into cubes of approx. 2 cm and place in a bowl. Roast pine nuts in a frying pan until golden brown. For the dressing: squeeze out the lemon, mix the juice with garden vegetables bouillon, water, honey and olive oil. Wash the mint, pluck the leaves from the stems and cut into small pieces. Put the dressing and the mint over the melon cubes and mix. Season with salt and pepper and garnish with pine nuts. You can serve the salad on plates with sprinkled pine nuts and mint.
