For The Quinoa Salad
0.50 cup quinoa
1 small apple
2 tablespoons pomegranate seeds
1 spring onion
15 grapes (light, without core)
1 tablespoon pecan nut
2 tablespoons of lemon juice
2 tablespoons olive oil
A bit mustard (medium hot)
1 spoon honey
Preparing The Quinoa Salad Recipe
Rinse quinoa under running water. Boil the quinoa with 1 cup of water and a pinch of salt and simmer for 20 minutes. In the meantime, wash the apple and remove the apple casing. Then cut it into small cubes. Wash radish and then cut into thin slices with the spring onion. Rinse grapes, pat dry and cut in half. Chop the pecans roughly and divide the slices. For the dressing mix all the ingredients together and season with salt and pepper.
Mix quinoa with apple, radishes, pomegranate seeds and spring onions. Dress it over and add on cheese, grapes and pecans.
Use fresh cress as a garnish for the quinoa salad. Then serve the salad or place it in a container (or bowl).
