Our Quick Tortellini Salad With Pesto Tastes Great

With this recipe, you save clever time when cooking: pepper strips and pine nuts are cooked together in the oven or roasted. Peas and tortellini are cooked together in a pot. Ingredients For The Salad

75 g Tomatoes dried in oil, from the glass

60-75 g, grated cheese (alternatively Parmesan)

30 g Cashews

Basil, preferably fresh

Garlic clove, more if you like

4 tablespoons Oil

For the pesto, cut the dried tomatoes into strips. Finely grate the cheese. Peel off the garlic cloves and finely chop. Now grind dried tomatoes, grated cheese, cashews, basil, and garlic in a blender to a solid paste, then mix in the oil. Now dilute the paste with the balsamic and, if necessary, some water to a creamy consistency. Season with salt and pepper. Mix in a bowl with the tortellini. Halve or quarter the cocktail tomatoes, depending on their size. Dice the mozzarella and halve the olives as desired. Mix everything with the tortellini and leave to cover.
