The Caesar salad is a classic of Italian cuisine. Originally served as a starter, it turns into a delicious entree with a few grilled chicken breast strips.

In the original Caesar salad, the egg remains raw. It is placed only for one minute in boiling water, then opened and separated. The egg can be disposed of or otherwise processed, because for the dressing of the Caesar salad only the egg yolk is needed: it is pureed with the garlic, the mustard and the anchovies in a high vessel. When an uniform mass has formed, the olive oil can be poured very slowly during the blending. Then simply season with salt, fresh pepper and lemon juice.

Quantity For 2 Persons

1 clove of garlic

100 ml of olive oil

2 slices of white bread 

2 dripped anchovy fillets

1 egg yolk

Juice of half a lemon

1 pinch of salt & pepper

1 splash of sauce

2 small lettuce hearts


Mash the garlic cloves, place in olive oil and leave for an hour. Cut the white bread into two slices, dice, pour over the garlic oil and bake at 200 ° C degrees circulating air for about 15 minutes. Put two drained anchovy fillets in a bowl and pour some olive oil over them. Then add egg yolk and mix well.

Squeeze juice of half a lemon and also in the bowl. Season with salt and pepper, refine with a dash of sauce and mix again. Add two small lettuce hearts to the bowl, mix with the sauce and grate with Parmesan cheese to taste.
