Green Lentil Salad Is One Of The Healthiest Salad Recipes

For those who stick to healthy diet and suffer from anemia; this healing recipe is a delicious green lentil salad.

Ingredients (For About 2-3 Servings)

1 cup of green lentils

3 tomatoes

1 bunch of coriander

5 tablespoons of lemon juice

Salt and pepper

1/2 cucumber

Olive oil

1 shallot

1 clove of garlic

1 teaspoon cumin

Preparation Of The Green Lentil Salad

Cook the green lentils in a saucepan with double the amount of water until it gets soft. Drain and allow to cool. Wash the tomatoes and cut into small cubes. Peel the cucumber and cut it into small pieces as well. Season the lemon juice with salt and pepper. Add olive oil and stir well. Give the dressing over the tomatoes and cucumber and mix.

Put the shallot and the garlic in very fine cubes. Heat oil in a pan and fry the shallot, garlic and cumin until the shallot is glassy. Add the onion-garlic mixture to the lentils and mix well. Add tomatoes and cucumbers as well.

Wash the coriander and shake it dry. Then pluck the leaves and chop them. Add over the salad and mix. Season the salad and add some salt and pepper to taste. Have fun trying it out and let it taste you.
