The nice thing about this cabbage salad is that it’s a normal standard recipe and it’s great for the next barbecue. With the food processor, it is made super fast and can be easily prepared.
Ingredients You Need
1.5 kg of white cabbage
9 tablespoons white wine vinegar
4 tablespoons oil
The Preparation Is Easy
Remove the outer leaves. Wash the cabbage under running cold water. Quarter the cabbage and use a sharp kitchen knife to cut out the stem in a wedge shape. Cut the cabbage into 2-3 mm thin strips with a sharp kitchen knife. If you have a vegetable slicer, then plan the cabbage on the knife side. Put cabbage strips in a large bowl. Drizzle with 3-4 tablespoons of vinegar and sprinkle with about 1 teaspoon of salt. Now the right style and power is required: Knead the cabbage vigorously with your hands for approx. 10 minutes until it forms a milky juice. This destroys the cell structure of the cabbage and the cabbage strips gradually become softer. Then let it rest for about 30 minutes. Peel the onion and cut into very fine cubes. First, halve the onion. Then cut into strips and finely dice. Mix 5 tablespoons of vinegar with cumin and 1 teaspoon of sugar in a small bowl. Smash oil. Cover the cabbage with the vinegar-oil mixture. Knead everything with your hands again for about 5 minutes. Season with salt, pepper, and sugar.
