Cowpea Salad Recipe: Things To Know

If you are looking for different tastes instead of the classic barren or potato salad made for guests coming to home, this must be tried. The only point to be considered when applying the recipe is the boiled portion of the cowpea. Dry beans do not take as long as strawberries. 10 min is enough. We advise you to take care, not to soften the beans too much while mixing.


2 cups of black peas (dry)

5 pieces of gherkin pickles

3 pieces of roasted red pepper

1 soup bowl of chopped parsley

1 stalk fresh onion

Lemon juice

1 cup of boiled corn

5 stalks fresh mint


3 tablespoons olive oil,

2 tablespoons of pomegranate syrup

Steps Cowpea Salad

1-Boil water until it softens and wait until it is cool.

2- Gherkins are round and roasted peppers are cut into small squares.

3- Slender the fresh onion and mint leaves.

4- In a deep bowl, blend beautifully boiled black eyed peas, chopped pickles , red pepper, corn, chopped parsley, onion and mint, salt, olive oil, lemon juice and pomegranate syrup.

5-Take the mixture to the serving plate and serve immediately.
