Chinese Cabbage Salad That Is Lukewarm And Combined With Fillets

Chinese cabbage salad is a really crisp all-rounder. It tastes braised, gratinated, roasted or delicious as a salad.

Recipe

250 g bacon treacle lean

500 g Chinese cabbage

2 onions in a medium size

2 tablespoons of oil

3 tablespoons white wine vinegar

Mustard

Salt and black pepper

3 tablespoons of oil

1 bunch of parsley plain-leaved

Steps

Prepare the cabbage, cut it in half and cut out the thick, hard stem in a wedge shape. Then cut the Chinese cabbage halves into narrow strips with the cut surface facing down across the veins.

Also, cut the bacon slices into strips. Peel the onions and finely chop. Heat the oil in a frying pan with a high edge or in a large normal pan. Slowly fry the bacon strips until they get crispy. Then add the onions and the Chinese cabbage strips and fry for 3 minutes with occasional turning. Add the bouillon and cook for another 3-4 minutes until the Chinese cabbage is just bite-proof.

The Sauce

Meanwhile, for the sauce, stir in vinegar, mustard, salt, pepper, and oil. Finely chop the parsley. Mix both with the hot cabbage in the pan and season if necessary.

For this recipe: you need zander fillets with its skin. Because the crisp secret of these fish fillets lies in the breading of the fish skin with Polenta Griess. Instead of zander, you can use other freshwater fish.
