Tangy Chicken Salad

 

Ingredients -

1 small Head Iceberg Lettuce, torn into bits
1 small head Romaine Lettuce, torn into bits
3 whole cooked Boneless, Skinless Chicken Breast, cut into 1/2" cubes
1 small can Mandarin Oranges
1 Apple, cored, peeped, and cubed
1/2 cup Celery, chopped
1/2 cup Toasted Almonds
1/2 cup Catalina French Dressing

 
Preparation:

1. Tear the iceberg and romaine lettuce into a large salad bowl.

2. Add the chicken, apples, oranges and celery and toss well.

3. Cover with plastic wrap and refrigerate until you are ready to serve.

4. Add the almonds about 15 minutes before you are ready to serve.

5. Pour the Catalina dressing on top and toss to coat.

6. Serve.

Storing Cooked Chicken

Steamed or grilled chicken is excellent for summertime. It can be diced or sliced and used in sandwiches, salads and side dishes without heating up the kitchen. Cooked chicken will keep for about three days in the refrigerator.

"Use By" and Sell By" Dates

Check the expiration date on chicken before you purchase it. If there is only a day or two before the expiration date, you might want to select another package. Also, if you are purchasing a whole chicken and the bag looks like it is expanded with air, even if the expiration date indicates it should be good, don’t buy that chicken.
