Summertime Chicken Salad with Honey Orange Dressing

 

Ingredients -

4 cups cubed Cooked Boneless, Skinless Chicken Breast
1-1/2 cups Grapes, sliced
1-1/2 cups Fresh Pineapple Chunks
1 can Mandarin Oranges
1 cup chopped Celery
3.4 cup slivered Almonds
1/2 cup chopped Red Onion

Honey Orange Dressing:
1 cup Mayonnaise
3/4 cup Orange Marmalade
1 tablespoon Honey
2 teaspoons Dijon Mustard
1/2 teaspoon Salt

 
Preparation:

1. Combine the chicken, grapes, pineapple, mandarin oranges, celery, almonds and onion in a large bowl.

2. Whisk together the mayonnaise, marmalade, honey, Dijon mustard and salt in a small bowl.

3. Pour 1/2 cup of the honey dressing over the chicken salad.

4. Cover with plastic wrap and refrigerate for at least 2 hours.

5. Serve with additional dressing.

Cooking Chicken Thoroughly

It is very important to cook chicken thoroughly so that any bacteria are killed. Chicken is more inclined to bacteria than some other types of meat because:

·Chicken meat is not very dense, so the bacteria travel more easily through it.

·When chickens are slaughtered and the feathers removed, bacteria can enter through the open pores.
