New West Chicken Salad

Cubed chicken mixed with grape halves, celery, green onion and combined with mayonnaise, ground ginger and salt. Covered and chilled, this chicken salad is great served on a bed of lettuce, or as a sandwich spread.

Ingredients -
3/4 cup Real Mayonnaise
1/2 teaspoon Ground Ginger (optional)
1/2 teaspoon Coarse Salt
3 cups cubed Cooked Chicken
1-1/2 cups Red Seedless Grapes, halved
1 cup sliced Celery
1/3 cup sliced Green Onions
1/2 cup broken Walnuts
 
Preparation:

1. In a small bowl, combine mayonnaise, ground ginger and salt.

2. Stir in cooked chicken, grape halves, celery and green onions.

3. Cover and chill.

4. Garnish with walnuts.

 



Chicken Salad Tips -
Real Mayonnaise

To cut a few calories from this recipe, substitute light mayonnaise for the regular mayonnaise.

Cooked Chicken

For variation, grill the chicken breasts over direct heat, 4-5 minutes, turn and grill the other side. Allow chicken to cool before cubing.
