Hot Chicken Salad

Hot casserole like side dish. Chicken cooked with celery mayonnaise, toasted almonds, grated onions, and topped with American cheese and crushed potato chips.

Ingredients -
2 cups Cooked, Cubed Chicken
2 cups sliced Celery
1 cup Mayonnaise
1/2 cup chopped Toasted Almonds
2 teaspoons grated Onions
2 tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 cup shredded American Cheese
1 cup crushed Potato Chips
 
Preparation:

1. Preheat oven to 450 degrees F.

2. Add cooked chicken, sliced celery, mayonnaise, toasted almonds, grated onions, lemon juice and salt to shallow dish. Toss to coat.

3. Sprinkle with shredded American cheese and crushed potato chips.

4. Bake for 10 minutes.

Lemon juice can be freshly squeezed or from lemon juice concentrate in a bottle.
