1. Preheat grill to medium.
2. Grill chicken breasts 4-5 minutes per side or until cooked through and golden brown outside.
3. Remove chicken from grill to plate and cool 5 minutes. Slice thinly.
4. Add fresh orange juice, red wine vinegar, extra virgin olive oil, salt and fresh ground black pepper to large bowl. Stir to combine.
5. Add salad greens, orange slices, pineapple chunks, and red onion to dressing. Toss to coat.
6. Spoon salad onto serving plates.
7. Top with grilled chicken slices.
8. Sprinkle with cashew pieces. |
