Cobb Salad

Mixed greens, chicken, eggs, bacon, tomatoes, cucumber, avocado, crumbled blue cheese in a white wine vinegar vinaigrette.

Ingredients -
3 tablespoons White-Wine Vinegar
2 tablespoons finely Minced Shallot
1 tablespoon Dijon Mustard
1/4 teaspoon Coarse Salt
1 teaspoon Fresh Ground Black Pepper
3 tablespoons Extra-Virgin Olive Oil
10 cups Mixed Salad Greens
1/2 pound shredded Cooked Chicken Breast
2 Eggs
2 strips Bacon
2 medium Tomatoes
1 Large Cucumber
1 Avocado
1/2 cup Crumbled Blue Cheese
 
Preparation:

1. Whisk white wine vinegar, minced shallots, Dijon mustard, salt and pepper in a small bowl to combine. Gradually pour olive oil in while constantly whisking.

2. Add salad greens to large serving bowl.

3. Add half the vinaigrette and toss to coat.

4. Divide salad greens among 4 individual salad plates. Top greens with chicken, egg, bacon, tomatoes, cucumber, avocado, and blue cheese.

5. Drizzle salads with remaining vinaigrette.

Cooked Chicken Breast

Chicken would normally be boiled or baked before shredding. Chicken can be grilled as a treat.
