Italian dressing tops a chicken salad mixture of wild rice, avocado, chicken and scallions. Garnished with toasted nuts and cherry tomatoes.
Ingredients -
1 package White & Wild Rice, original flavor, cooked according to directions.
2 Ripe Avocados, peeled, pitted and diced
1 tablespoon Fresh Lemon Juice
3 cups Cooked Chicken, cut into bite-sized pieces
4 Scallions, chopped
1 cup Italian Dressing
1/2 cup Toasted Pine Nuts or Sliced Almonds
1 cup Cherry Tomatoes
Preparation:
1. As rice finishes cooking stir in chicken, scallions, and Italian dressing.
2. Pour into serving dish and chill until ready to serve.
3. Toss avocados with lemon juice.
4. Garnish chicken rice salad with avocados, nuts and cherry tomatoes.
