Caribbean Chicken Salad

Chicken or turkey combined with rice, celery, green pepper, crushed pineapple and sliced pimiento. Chicken salad is topped with a salad dressing blend of yogurt, mayonnaise, lemon juice, salt and pepper.

Ingredients -
2 cups Cooked Chicken or Turkey, diced
3 cups Cooked Rice, cooled
1 cup Celery, finely sliced
1/4 cup Green Pepper, chopped
1 teaspoon Curry Powder
8 ounces crushed, unsweetened Pineapple
2 tablespoons Pimiento, sliced
1/2 cup Non-Fat Plain Yogurt
1/4 cup Light Mayonnaise or Mayonnaise
1-1/2 tablespoons Fresh Lemon Juice
1/2 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. In a serving bowl, combine cooked chicken, cooked rice, chopped celery, chopped green pepper, crushed pineapple and sliced pimiento.

2. Blend yogurt, mayonnaise, lemon juice, salt and pepper.

3. Pour over chicken salad mixture.

4. Toss lightly until well mixed. Chill until ready to serve.

Grilled Chicken

For variety grill the chicken breasts over direct heat 4 to 5 minutes per side. Allow cooling before cubing.
