Cajun Chicken Salad

 

Ingredients -

1-1/2 tablespoons Fresh Lemon Juice
2 Garlic Cloves, minced
1/2 teaspoon Dried Thyme
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1/8 teaspoon Cayenne Pepper
1/2 cup Non-Fat Plain Yogurt
3 cups cubed, Cooked Boneless, Skinless Chicken Breast
1 cup thinly sliced Green Onions
1/2 cup diced Green Bell Pepper
1/2 cup diced Celery
3 cups diced Fresh Tomatoes

 
Preparation:

1. In a medium bowl, add the lemon juice, minced garlic, thyme, salt, black pepper and cayenne pepper and mix well.

2. Beat in the yogurt with a wire whisk.

3. Gently fold in the chicken, green onion, bell pepper and celery.

4. Refrigerate until you are ready to serve.

5. Right before serving, gently fold in the tomatoes.
