Black Bean Chicken Salad

Black beans combined with torn lettuce, cubed chicken breast, chopped tomatoes, chopped green pepper, sliced red onion, reduced-fat cheddar cheese, and topped with a lime vinaigrette.

Ingredients -
6 cups torn Lettuce
1 1/2 cups cubed Cooked Chicken Breast
1 (15 ounces) can Black Beans, rinsed and drained
1 cup chopped Seeded Tomatoes
1 cup chopped Green Pepper
1/2 cup sliced Red Onion
1/2 cup shredded Reduced-Fat Cheddar Cheese

Lime Vinaigrette:
1/4 cup minced Fresh Cilantro or Parsley
1/4 cup chopped Seeded Tomato
1 tablespoon Cider Vinegar
1 tablespoon Olive or Canola Oil
1 tablespoon Fresh Lime Juice
1/2 teaspoon grated Lime Peel
1 Garlic Clove, minced
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Chili Powder

 
Preparation:

1. Combine lettuce, chicken breast, black beans, tomatoes, green pepper, red onion, and reduced-fat cheddar cheese.

2. Add lime vinaigrette ingredients to blender or food processor. Cover and process until smooth.

3. Pour over chicken salad, toss to combine and serve.

Fresh Lime Juice

Don't be tempted to use bottled lime juice instead of fresh.

Chili Powder

For a spicier vinaigrette add a little more chili powder to the vinaigrette, or a little diced jalapeno to the chicken salad.
