BLT Chicken Salad

 

Ingredients -

1 (10 ounces) bag Mixed Salad Greens
1/2 pound Grilled Chicken Breast Tenders
1/2 cup Sharp Cheddar Cheese
1 cup Cherry Tomatoes, halved
1/2 cup Red Onion, thinly sliced
4 Turkey Bacon Slices, cooked crisp and crumbled
1/2 cup Ranch Dressing

 
Preparation:

1. In a large mixing bowl, combine the greens and next 4 ingredients and toss well.

2. Transfer the green mixture to a large serving platter.

3. Drizzle with ranch dressing and sprinkle the bacon on top.

4. Serve immediately.

Raw Chicken Choices

Raw chicken breasts are available in many forms: fresh, frozen, skinless, boneless, halves and tenders. Slightly frozen skinless chicken breasts are great for stir fry because the meat can be sliced thinly and it cooks quickly. Cook the meat first until barely done, then remove from the pan. Add vegetables, cook until almost crisp-tender then add the chicken and sauce, heat through and serve.

Overcooking Chicken Breasts

Overcooking chicken breasts will produce dry meat, while undercooking makes them tough and could even result in salmonella poisoning. Check for doneness by piercing the thickest part of the breast with a fork. The juices should run clear with no evidence of pink coloring. Perfectly cooked chicken will register 170 degrees on a meat thermometer at the thickest part of the breast.
