Avocado Chicken Salad

Ripe avocados mixed with cooked chicken, red grapes, apples, celery, mayonnaise, walnuts, ground ginger and lemon juice. Served on lettuce lined plates.

Ingredients -
1 medium Ripe Avocado, peeled and cubed
2 tablespoons Lemon Juice, divided
2 cups cubed cooked Chicken
2 cups Seedless Red Grapes, halved
1 medium Tart Apple, chopped
1 cup chopped Celery
3/4 cup Mayonnaise
1/2 cup chopped Walnuts, toasted
1/2 teaspoon Ground Ginger
Iceberg or Romaine Lettuce Leaves
 
Preparation:

1. Toss avocado with 1 tablespoon lemon juice in a small bowl, and set aside.

2. Combine cooked chicken, halved red grapes, chopped apples, chopped celery, mayonnaise, chopped walnuts, ground ginger and remaining lemon juice.

3. Stir in avocado.

4. Serve on lettuce-lined plates.

Ripe Avocado

Avocado should give a little when pressed with finger. Stiff and its not ripe, squishy and its over ripe.


Chicken Salad Tips -
Walnuts

Toast walnuts in the oven on very low temperature like 200 F. Place walnuts on baking sheet and toast until the natural sugars begin to caramelize and brown the walnuts. Makes the kitchen smell great.
