Asian Chicken Salad with Almonds and Red Wine Vinaigrette

 

Ingredients -

1 (3 ounces) package Oriental-Flavor Ramen Noodle Soup Mix
1/2 cup Sliced Almonds
3/4 cup Red Wine Vinaigrette
1 (16 ounces) package Broccoli Slaw Mix
2 cups shredded Cooked Boneless, Skinless Chicken Breast
1/2 cup Fresh Cilantro Leaves
2 Scallions, both white and light green parts, chopped

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Crush the noodles and place them on a rimmed baking sheet along with the almonds.

3. Bake the noodles for 6 to 7 minutes or until they begin to turn light brown in color.

4. Add the red wine vinaigrette and the ramen seasoning packet to a large glass measuring cup and whisk together.

5. Set the dressing aside.

6. In a large serving bowl, combine the broccoli slaw, chicken, cilantro and scallions and toss well.

7. Pour the salad dressing over the salad and toss well to coat.

8. Sprinkle with toasted almonds and noodles and serve.

When chicken says it's all natural, certified, organic, free range, fresh, etc., what do these terms mean? The USDA (U.S. Department of Agriculture) sets the definitions for these terms as follows:

Certified: The USDA has evaluated the product for class, grade, quality, etc., and certifies that it meets the standards.

Free range or free roaming: Poultry must have documented access to the outside.

Fresh: This term means that the chicken has never been below 26 degrees Fahrenheit.

No Antibiotics: The grower has proven to the USDA that the meat or poultry was raised without the use of antibiotics.

Organic: The chickens have been raised without preservatives, toxic chemicals or synthetic ingredients, they are not from cloned chickens, and the meat has not been irradiated.
