Asian Chicken Salad

Delicious chicken salad combines shredded chicken with lettuce, sesame seeds, green onions and chinese noodles. Salad is topped with Asian salad dressing.

Ingredients -
2 tablespoons Brown Sugar
2 teaspoons Soy Sauce
1 tablespoon Sesame Oil
1/4 cup Vegetable Oil
3 tablespoons Rice Vinegar
1 (8 ounce) package Dried Rice Noodles
1 head Iceberg Lettuce, rinsed, dried and chopped
4 Boneless, Chicken Breast Halves, cooked and shredded
3 Green Onions, chopped
1 tablespoon Sesame Seeds, toasted
 
Preparation:

1. Prepare asian chicken salad dressing one half hour ahead of time. Combine brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar.

2. In large bowl, combine shredded chicken, lettuce, green onions and sesame seeds.

3. Chill the salad mixture 15 minutes.

4. Break noodles into small pieces. Heat skillet with a few tablespoons of oil.

5. Add noodles to skillet and fry them. They puff up considerably so do the noodles in small batches.

6. Cook the noodles well for the correct consistency. Once cooked, add them to the salad mixture.

7. Serve asian salad with asian salad dressing.

For variations, chicken breasts can be grilled, boiled, broiled, fried, deep fried, or baked. Fix them your favorite way.

Sesame Seeds

Toast sesame seeds in the oven. Place on cookie sheet at low temperature. Keep an eye on them as they will burn. They toast quickly.
